Garden Lites® - sneaking in those veggies muffin style

We are one of those houses where someone tends to always be running behind. My son is especially guilty of this in the mornings before school. Many times he's running so far behind he gets up, dressed, and out the door. And that means he usually forgets breakfast. So I try to keep things on hand that he can grab quick and eat on the way to the bus. Most recently I added Garden Lites® to my inventory of breakfast on the go foods. One thing I really like about Garden Lites® is that they are 100% Non-GMO, only 100 calories, Gluten- Free, and completely vegetarian. So I know that my son is starting his day off right, and not with a Pop-Tart that is basically full of well...nothing good for him. Plus he has honestly not even began to suspect that they are good for him. He just saw the chocolate muffins and thought he was scoring big. Of course I'm not going to let him in on my little secret that they are actually filled with lots of veggies and good for him. I like them for an afternoon snack. I can pull one out of the freezer in the morning to thaw on the counter and by mid-day it's ready to be eaten. Any way you look at it they are great for breakfast or for a healthy snack any time of the day.

Garden Lites® are made with fresh zucchini and carrots, both the Garden Lites Chocolate and Blueberry-Oat Muffins are delicious and filling treats whose first and main ingredients are vegetables! With just the right amount of sweetness and flavor, Garden Lites muffins are perfect for breakfast, lunch or as an anytime snack.

All of the Garden Lites varieties are gluten-free, vegetarian, low in calories, a good source of fiber, and Kosher Parve.  Each box contains individually wrapped 2-ounce muffins offering convenient portability on-the-go; they’re also very quick prep—Garden Lites muffins heat up in the microwave in only 35 seconds.  They can even be enjoyed with no prep at all at room temperature for an unbeatably quick snack.
