Smoked Chicken with Wish-Bone E.V.O.O. Sundried Tomato


We are big chicken fans in our house, it's probably my favorite meat of them all. It's easy to prepare, very versatile, and it tastes great! I'd have to say there's not really anything about chicken I don't like. Over the past year we've actually be trying out different ways of cooking chicken in our electric smoker. (On a side note if you've never smoked meat before I highly recommended it.) We'v done whole chickens as well as bone-in and bone-out. We've used BBQ sauce and we've used various seasonings. And since receiving an awesome kit from Wish-bone we've now done it marinated. I used a bottle of the Wish-Bone E.V.O.O. Sundried Tomato and let my chicken breast marinate in it for a few hours before cooking it in our smoker. I did poke some holes in the chicken with a fork first so that it would allow the marinade to season not just the outside of the chicken, but the inside too. And the result (as you can see from the photo) was wonderful. I loved the way the flavor of the sundried tomato was all through the entire piece of chicken.
